Muenster Cheese Recipe

Many years ago, my sister and I earned 4-H blue medals with this bread. It makes a golden loaf with cheese peeking from every piece. Melanie Mero, Ida, Michigan


– 1 package extra firm tofu 14-16 ounces, either is fine – 1-2 tbsp lemon juice start with 1 – 2 tbsp apple cider vinegar – 1 tbsp nutritional yeast – 3 tbsp fresh chopped chives plus more for serving – 2 cloves garlic – 1 tsp onion powder – 1 tsp garlic powder – 1 tsp salt or more to taste – 3 tbsp melted coconut oil refined, not virgin – ¼ tsp dried dill – ¼ tsp pepper


In a large basin, dissolve yeast in milk. Beat butter, sugar, salt, and 2 cups flour until smooth. Add remaining flour to make a soft dough.

Step 1

Knead 6-8 minutes on a floured surface until smooth and elastic. Turn once to grease bowl top. Cover and let rise in a warm location for 1 hour to double.

Step 2

Beat egg and yolk in a large bowl; add cheese. Roll 16-inch circle from punched dough. Lay dough over the borders of a greased 10-inch cast-iron skillet or 9-inch round baking pan.

Step 3

Spoon cheese mixture into dough centre. Make 1-1/2-inch pleats over filling. For a topknot, gently pinch pleats at top and twist. Let rise 10-15 minutes.

Step 4

Brush egg white on loaf. Baking at 375° for 40–45 minutes. Let cool 20 minutes on a wire rack. Warm serve.
