These dinner rolls are so soft they'll blow your mind. They're buttery and slightly sour. These are ready in two to three hours and can be on your table quickly!
– ½ Cup Warm Water 120g– 1 tablespoon Active Dry Yeast 12g– 4 tablespoon Sugar 55g– ½ Cup Bubbly Starter 60g– 1 Cup Whole Milk 240g– 2 tablespoon Unsalted butter — softened and cubed 28g– 3 ¾ Cup All-Purpose Flour 450-500g– ½ tablespoon Salt 12g– 2 tablespoon Milk Powder 20g
Poofing The Yeast:- Mix warm water and yeast in a bowl with a fork. Wait a few minutes until plump and happy. Add a pinch or two of sugar to boost proofing yeast. Yes, yeast adore it!
Preparing Liquid:- To the water and yeast mixture, add milk, butter, sugar, and sourdough starter that is active or not active. Stir the ingredients together. It's okay that the butter is clumpy at this point.
Adding Dry Ingredient:- Add salt, half the flour, and all the milk powder to another bowl. By hand or with a dough hook in a stand mixer at low speed, gradually add the flour mixture to the liquid.
Add the remaining flour slowly until the dough forms a ball and leaves the bowl. It would be tacky but workable.
Kneading the Dough:- Knead dough in a stand mixer on low for 8-10 minutes. Knead this dough as long as you like. Similar to hand-kneading! Knead till comfortable and windowpane-tested. After passing the windowpane test, it will feel silky. Know its readiness!
First Rise:- Next, grease a bowl and put the dough in it. Cover it with a wet towel or cling wrap. Leave it somewhere warm until it has grown twice as big.
Forming The Roll:- Doubled dough should be punched down and slightly dusted. Make 12 equal-sized dough balls. Technically, each ball weighs 80g. Everyone in my batch was 83g. Aim for consistency while weighing ingredients.
Second Rise:- Place dough balls in a buttered 9x13 baking dish and cover with a moist cloth or cling film. Let rise for 30 minutes in a warm location. Preheat oven to 375.
Baking The Roll:- Bake premade dinner rolls at 375 for 30 minutes or until golden brown. Cool thoroughly and serve!
