Sourdough Oatmeal Cookies with Discard Recipe

My cinnamon-flavored sourdough muesli cookies are the perfect way to use up your starter. These soft and chewy cookies have an optional maple glaze that hardens on top to enhance their chewiness. These are addictive!

INGREDIENT

Sourdough Oatmeal Cookie – 1 Cup Butter softened – 1 ½ Cups Packed brown sugar – ½ Cup White Sugar – 2 teaspoon Vanilla extract – ¼ Cup Sourdough discard – 2 Eggs room temperature preferred – 2 ¼ Cups All-purpose flour 270g – 1 ½ teaspoon Cinnamon – ½ teaspoon Nutmeg – 1 teaspoon Baking soda – 1 teaspoon Salt – 3 Cups Quick-cooking oat Maple Glaze – 1 Cup Powdered sugar – ¼-1/3 Cup 100% Maple syrup – ¼ teaspoon Cinnamon – ½ teaspoon Vanilla extract – Milk as needed for consistency add 1 teaspoon at a time

INSTRUCTIONS

Make The Cookie :- Set oven to 375°F and prepare baking sheet with parchment or silicon. A stand mixer or mixing bowl can be used to beat softened butter, sugars, and vanilla extract until frothy.

Step 1

This should take 5-10 minutes. Scrape bowl sides with sourdough refuse and eggs. Simply combine. In a separate bowl, combine flour, cinnamon, nutmeg, baking soda, salt, and quick-oats.

Step 2

Stir dry ingredients into wet ingredients slowly. Place dough balls 2 inches apart on the prepared cookie sheet using a cookie scoop or spoon. Softly flatten cookies with a fork to bake evenly. 

Step 3

This step is optional but recommended for uniformity. Oven bake 8 minutes. After baking, let cookies cool on the pan for 5 minutes before transferring to a cooling rack. Before maple glazing, cool fully.

Step 4

Make The Maple Glaze :- Whisk powdered sugar, maple syrup, cinnamon, and vanilla until mixed after the cookies cool. If the glaze is too thick, add 1 teaspoon of your preferred milk until it drizzles from a spoon.

Step 5

Pour the glaze over cooled cookies with a spoon after mixing. Dunking the top or one side of the cookie in the glaze is easier and yields more glaze per cookie. Lay coated cookies on a rack or parchment paper to dry and set the glaze.
