Sourdough Pull Apart Bread Recipe

A rich, cheesy loaf with herbs added that is made from sourdough scraps.

INGREDIENT

Make The Dough – 2 teaspoon active dry yeast – ¼ cup warm water 60 gram – 2 teaspoon sugar – ½ cup warm milk 120 gram – ½ Cup sourdough discard – 1 egg – 1 egg yolk – 2 tablespoon butter unsalted – 1 teaspoon salt – 3 ⅔ cup flour 450 gram Make The Filling – 6 tablespoon unsalted butter softened – 2 teaspoon dried thyme or 2 tablespoon fresh thyme – 1 teaspoon dried parsley or 1 tablespoon fresh parsley – ½ tsp dried garlic – ¾ cup mozzarella – ¼ cup parmesan

INSTRUCTIONS

To a large mixing basin or stand mixer bowl, add warm (120 degrees or less) water. Active dry yeast, sugar. Rest 5 minutes to grow yeast.

Step 1

Next, add warm milk, sourdough waste, melted butter, and one room-temperature egg and yolk. Combine. Add flour and salt. Mix by hand or stand mixer on low until smooth balls form.

Step 2

Knead the dough for 5-10 minutes until it passes the "windowpane test" (stretching without breaking but seeing light). Do not over knead. Wait an hour to double in greased basin.

Step 3

Make garlic-herb butter while dough rises. Mix butter, mozzarella, parmesan, salt, dried garlic, parsley, and thyme in a bowl. Set aside. After proving, create 12 equal-sized balls on a lightly floured board. Balls weigh 70g.

Step 4

Flatten each ball. Unevenly shape them. Spread 1 teaspoon butter mixture on each flattened dough ball. Spread dough lightly. Before baking, melt remaining ingredients and top bread for taste.

Step 6

Fold and stretch dough into a loaf pan rectangle like a taco. Butter a loaf pan and put 12 dough pieces. Let dough rest while oven heats to 375°F. Stop worrying about raises.

Step 7

At 40–45 minutes, sourdough pull-apart bread should be golden brown. Warm butter and serve!
