These Pumpkin Blondies are made with only white chocolate and are soooo fudgy and moist, and they taste great with pumpkin!
– 4 oz 113g pure white chocolate coarsely chopped– 6 tablespoon 84g unsalted butter– ¾ cup 165g packed dark brown sugar– 2 large egg yolk– ½ cup 120ml pure pumpkin puree blotted 3 times with a paper towel– 1 teaspoon 5ml pure vanilla extract– 1 cup 142g all-purpose flour– 1 teaspoon pumpkin pie spice– ½ teaspoon salt– ½ cup 85g white chocolate chips plus extra for topping
Preheat oven to 350°F. Leave a 2-inch overhang on either side of an 8x8-inch baking pan with parchment paper.
Place a heatproof bowl of white chocolate and butter over a pot of just simmering water. Stir till smooth and melted. Or microwave at 50% power in brief bursts with frequent swirling.
Whisk brown sugar, egg yolks, pumpkin puree, and vanilla in a large bowl until smooth. Stir in warm melted white chocolate. Add salt and pumpkin spice. Add flour and gently fold. Before adding the flour, mix in the white chocolate chips.
Evenly distribute remaining ingredients in pan. Top with more white chocolate chips. Bake until the top is golden, glossy, and crackly and the edges are browned, 25-30 minutes.
